WhiteHaven 2007 Sauvignon Blanc and Baked Goat Cheese in a Walnut Crust with Greens and Apples

Baked Goat Cheese in Walnut Crust with Greens and Apple

4- 2oz rounds of fresh mild goat cheese, each about 1 inch thick
or 1- 8 oz log cut into 1 inch rounds

1-2 tbsp extra virgin olive oil, or as needed
½ cup walnuts toasted and finely chopped
½ cup toasted bread crumbs
1 tsp chopped fresh thyme

6 tbsp walnut oil
2 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
1 tbsp sherry vinegar
Salt and freshly ground pepper

½ cup walnut halves
4-6 cups mixed salad greens
1 tart green apple (Pippin or Granny Smith)

To prepare cheese: Coat the cheese rounds with olive oil and let stand on a plate at room temperature for 30 minutes.

Combine the chopped walnuts, breadcrumbs and thyme on a plate. Dip the cheese rounds into the nut mixture, making sure all sides are evenly coated. Gently press the coating into the cheese. Place the cheese on a baking sheet lined with baker’s parchment

For the vinaigrette: In a small bowl whisk together the walnut oil, 2 tbsp extra virgin olive oil ad both vinegars Season the vinaigrette to taste with salt and pepper

Just before serving preheat the oven to 400 degrees. Spread the walnut halves out on a small baking pan and toast until fragrant (about 8 minutes) When cool enough to handle chop them coarsely Put them in a small bowl and toss with enough vinaigrette to coat
Bake the nut-crusted cheese until the cheese is softened and the nut mixture is aromatic, about 10 min.

Place the salad greens in a bowl. Reserve 3 tbsp of vinaigrette Toss the greens with the remaining vinaigrette and distribute evenly among the salad plates.
Cut the apple in half remove the core and slice the apple with the peel on into thin half rounds . Place about 6 slices of apple atop the greens on each side of the plate and drizzle reserve vinaigrette on the apples. Top with the pre-dressed walnuts Place 1 or 2 warm goat cheese rounds adjacent to each salad or on top of it and serve immediately.
