Wente 2007 Small Lot Duetto Cabernet Sauvignon and Coffee-Marinated Beef Tenderlin Steaks with Grilled Asparagus and Tomatoes

Coffee-Marinated Beef Tenderloin Steaks

Prep: 5 minutes; Cook: 4 minutes; Other: 8 hours

1 cup strong brewed coffee
1 1/2 tablespoons dark brown sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground red pepper
2 garlic cloves, minced
4 (4-ounce) beef tenderloin steaks, trimmed (1/2 inch thick)
Cooking spray

1. Combine first 6 ingredients in large zip-top plastic bag. Add steaks; seal bag. Marinate in refrigerator 8 hous, turning occassionally.
2. Prepare grill
3. Remove staks from marinate; discard marinade. Place steaks on grill rack coated with cooking spray. Grill 4 minutes on each side or until desired degree of doneness. Yield: 4 servings (service size: 1 steak)

Grilled Asparagus and Tomatoes

Prep: 2 minutes; Cook 6 minutes

1 pound fresh asparagus, trimmed
4 plum tomatoes, halved
1 tablespoon olive oil
Cooking spray
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 teaspoon grated lemon rind

1. Prepare grill.
2. Place asparagus and tomato halves in an 11 x 7-inuch baking dish. Drizzle vegetables with oil; toss gently to coat. Place vegetables on a grill rack coated with cooking spray. Grill asparagus 3 minutes on each side; Grill tomato 1 minutes on each side. Return asparagus and tomato to dish. Sprinkle with salt, black pepper, and lemon rind.
Yield: 4 servings (serving size: 1/4 of the asparagus and 2 tomato halves.)
