Thumbprint Cellars 2005 Four Play and Buffalo Wing Grilled Pizza

The “Four Play” is a blend of:
53% merlot
22% cabernet sauvignon
18% syrah
7% cabernet franc

Buffalo Wing Grilled Pizza:

This pizza was inspired from the Flat Bread Pizza Company in Maui Hawaii.

Ingredients:
- Chicken. About 5 boneless / skinless thighs or about 3 skinless breasts.
- Buffalo Wing Sauce
- One cup diced celery
- One cup shredded carrots
- Extra-Virgin Olive oil
- Two cups, separated, Mozzarella cheese.
- Corn Meal
- Pizza Crust: Either roll you own or use Boboli thin pizza crust.
- Bleu Cheese dressing (creamy and chunky) or Ranch Dressing

Preparing the chicken and crust:
Marinate the chicken in the buffalo wing sauce for at least one hour to one day.

Grill the chicken on your grill or bake in the oven. When the chicken is ready let it cool before cutting up, otherwise you will burn your fingers. When ready cut the chicken into small pieces and mix in some olive oil and buffalo wing sauce.

While the chicken is grilling or baking spread a thin layer of extra virgin olive oil and buffalo wing sauce on the crust. Let the olive oil/buffalo wing sauce on the crust at least 45-minutes to allow the sauce to soak into the crust.

Making the pizza:
- Put some corn meal on a baking sheet or flat cooking stone. The corn meal helps prevent the crust from sticking to the sheet or stone.
***If “baking” the pizza on the grill make sure the baking sheet or stone can go on the grill. ***
- Place the crust on the baking sheet or stone.
- Spread the chicken on the crust evenly.
- Spread out one cup Mozzarella cheese on the chicken.
- Spread the Celery out on top of the chicken.
- Spread the shredded Carrots on top of the Celery and chicken.
- Spread the other cup of Mozzarella cheese on top of everything.

Cook the pizza on the grill at about 500 degrees for 10 to 12 minutes, until the cheese is starting to turn brown.

Let the pizza cool a little bit before cutting into slices.

Drizzle some creamy and chunky bleu cheese dressing or ranch dressing on each slice.
