Woodenhead 2014 French Colombard - Ressian River Valley Wes Cameron Ranch and Shrimp Tostada with Corn Relish and Lime Aioli

Shrimp Tostada with Corn Relish and Lime Aioli

Ingredients:
Disclaimer: all ingredients are estimated- use at your own risk.

Lime Aioli
1/4C Mayo (I used Sir Kensington’s because it only has egg yolk (not whites) and only processed ingredient is the sunflower oil- it’s much richer and yummier)

1 Lime zested and juiced
1 tbsp. olive oil
1 clove garlic
Salt and pepper to taste.
Mix all ingredients in a small bowl, cover and refrigerate (overnight is best)

Tostada

1lb Shrimp
1 bunch each cilantro, dill and mint remove stems
1-2 limes wedged (depending on number of people you are serving)
3 ears white corn (can substitute yellow and/or frozen depending on season)
1 4oz jar diced pimentos
1 medium onion (I used red)
1C green onion (I did not use white part)
1 tsp. mustard seed
1tsp celery seed
1/4C Apple cider vinegar
2 tbsp. sugar
2 C grape or cherry tomatoes halved
1 avocado diced
Corn tortilla –fresh and deep-fried or store bought hard.

Season shrimp with salt and pepper and toss with an olive oil (set aside to marinate – I marinated overnight)

Combine Vinegar, Sugar, and Mustard and celery seed in a small bowl

Heat olive oil in large pan and sauté onions until soft and begin to caramelize, add corn and toss until it begins to soften. Add Vinegar mixture and sauté 5-6min. Add Salt and pepper to taste. Remove from heat and add tomatoes and avocado.
(You can do this ahead of time if you want flavors to marinate together- I let it cool and then placed in refrigerator for 6 hours- brought to room temp before serving)

Grill Shrimp 2 min per side.

Place tortilla shell on plate and add corn relish, then shrimp (used 5 on each tostada) drizzle generous amount of lime aioli tower cilantro, mint and dill on top and lime wedge on the side.
